Okay so you are definitely watching Superbowl XLVII even if you can't afford a pizza, take-out or a couple beers at the pubs or Sports bars. Or maybe you just do not want shell out the cash. Alrighty then lets do something about the hunger pangs you will get so don't end up chewing your tongue or something.
Just look in your fridge and see what's in there that does not have fuzz on it. Left overs are a hungry man's buffet of luxurious eating. So, this woman has left over baked potato wedges, pico de gallo, homemade poultry batter and Chicken that was marinating.
So, if you have chicken in the freezer, defrost it, cut in strips, shake a little pepper, salt or Mrs. Dash or whatever you like on your chicken let it set in the fridge about 30 minutes. For this recipe the chicken was marinated for 48 hours. Get a cookie sheet or whatever you use to cook cornbread or pie.
Put a cap of olive oil or whatever oil you got on hand and rub it all over the inside of pan. Place chicken in pan some coated with batter and some without. The batter is just 1/2 cup of corn meal, 1/2 cup of flower, pepper, italian seasoning, cayenne pepper and lemon pepper if you are ok with salt. Let the chicken cook til tender. You should be able to cut it with a spoon and the meat will be white. If not over cooked it will be moist.
While that's cooking get out the sides you want to eat. For this meal its potato wedges. So stick them in the oven for about 10 minutes or til hot. If you got any let over taco meat add a spoonful and add the pico de gallo, stir it up and place back into the oven for about 5 minutes.
If you have any Pace Picante sauce or Spanish green spicey sauce or Louisiana hot sauce put some in a bowl and place chicken strips in bowl mix and let sit a minute or two. Take potatoes out and plate food.
Dessert is a dump cake. Dump some canned fruit into a cake or pie pan dump a jiffy cake mix on top of the fruit. Then put pats of butter on top and bake til golden brown. The cake mix is $.66 to $.75.
