Craving "Happy Hour" style cuisine but have less than an hour to cook? This fun recipe can be made in a jiffy, and with just a few ingredients! A pound of chicken breasts is all it takes and you're on your way to quick and easy tacos to spice up any drab weeknight!

Ingredients and Utensils

1 pound of chicken breast meat sliced thinly

1 cup of your favorite salsa

2 Tbsp cooking oil

8 Taco shells

Step One

Add sliced chicken breast meat to a bowl then stir in 1/4 cup of salsa and 1 tablespoon of oil. Cover the bowl and let the mixture marinate for at least thirty minutes.

Step Two

While the chicken is marinating, preheat the oven to 350 to later warm up the taco shells. Add remaining oil to a saute pan and cook the chicken breast meat after it is finished marinating. Once chicken is also done cooking, arrange taco shells on a baking sheet and cook in the oven for three to five minutes until warm and golden brown.

Fun Taco Toppings

Serve tacos with remaining salsa and other topping of your choice. I like to use corn salsa and top my tacos with sour cream and field greens. The possibilities are endless!
