Double Fudge Irish Cream CookiesIf you’re looking for a rich fudgy cookie that’s perfect for dunking in Irish cream liquor coffee you must try this cookie.  White chocolate, chocolate, and Irish cream make for a great St. Patty’s Day cookie.Recipe from How Sweet It IsIngredients:1 cup butter, softened1 1/2 cups sugar2 eggs1 teaspoon vanilla2 2/3 cups flour1/2 cup cocoa powder1 1/4 teaspoon baking soda1/4 teaspoon salt1 teaspoon instant coffee powder8 tablespoons Bailey’s Irish Cream1 cup white chocolate chips1/2 cup chocolate chipsDirections:1. Chocolate Irish Cream CakeThis rich chocolate cake is a mixture between store bought and homemade, making if perfect if your short on time and still want to impress.Recipe from Cookie MadnessFor the cake:1 package chocolate cake mix1 (4 oz) package chocolate instant pudding mix4 eggs1/2 cup Irish cream1/2 cup cold water1/2 cup vegetable oilFor the filling:1 1/2 cups cold milk1/2 cup Irish cream1 (4 oz) package chocolate instant pudding mix1 (5.2 oz) package Dream Whip — all four envelopesFor the whipped topping:2 cups heavy whipping cream whipped and sweetened to taste with powdered sugar (about 4 tablespoons) and vanilla.  For a quick topping use Cool Whip.  You can also dye the whipped topping green for extra St. Patty’s Day spirit.Directions:1. Preheat oven to 350 degrees. Grease two 9-inch round pans.2. Combine all cake ingredients in a large bowl and beat at medium mixer speed for 2 minutes. Pour into prepared pans. Bake for 20 to 25 minutes. Cool in pans 10 minutes on wire rack. Remove from pans and finish cooling on racks.3. Prepare filling: Combine all filling ingredients in a mixing bowl and blend well at high speed for 4 minutes or until light and fluffy.4. Split layers in half (so you have four total layers).  Spread about one cup filling between each layer and on the top layer. Put the cake in the refrigerator and let it chill before you cover it with whipped cream. This will help keep the top layer of filling from spreading into the whipped topping.5. St. Patrick’s Day, March 17, is the day to celebrate St. Patrick of Ireland. Irish and non-Irish celebrate “the luck of the Irish” by wearing green, sporting shamrocks and leprechauns, and often drinking alcohol.

Drinking green beer on St. Patty’s Day is pretty popular but if you’re not a beer drinker Irish cream is perfect for the occasion. Irish cream is cream based liquor that can be drank on its own, in a mixed drink, or better yet, baked with!

Some popular brands of Irish cream include: Baileys, Carolans, and Saint Brendan’s. While these are not the only brands available, they are the most popular.

If you’re really in the homemaking mood you can make your own Irish cream.

Homemade Irish Cream: (This recipe is from Cupcake Project)

Ingredients:
1 cup light cream
14 oz. sweetened condensed milk
1 2/3 cup Irish whiskey (such as Jameson’s)
1 teaspoon instant coffee
2 tablespoons Hershey’s chocolate syrup
1 teaspoon vanilla
1 teaspoon almond extract (optional)

Directions:
1. Combine all the ingredients in a blender and blend on high for 30 seconds.

2. Bottle in a sealed container and refrigerate. Shake well before using. Will keep for up to two months in the refrigerator.

Whether you buy your Irish cream or make your own be sure to put into one or more of the delicious baked goods suggested. There’s something to for everybody!
