By using a gluten-free multipurpose baking flour and Organic Agave Syrup the wheat and gluten are gone and the Glycemic Index is much less, less than 39 versus 60. Agave has 60 calories per tablespoon but is much sweeter so less can be used (white cane sugar has 48 calories per tablespoon). And Agave is not refined.
Those aspects do not make these cookies a "free" food. If you are watching your weight you still have to keep track of how many you eat. But you won't have the blood sugar spike of regular sugar.
