How can anything so tasty be so quick and simple? Well, you're about to find out. First you want to start out with fresh flour tortillas. You can make your own with this recipe.

Once you have your flour tortilla laid out, you want to slather the top with some refried beans. Think of this as being the pizza sauce. Don't add to much as during the cooking process the refried beans will become thinner in consistency.

Atop the refried beans you want to layer on some freshly grated cheese. You can use any type of cheese you prefer. We like to use a peppered jack cheese as it melts very well and the minced peppers in the cheese add more taste.

Here is where you can have some fun. For the final layer add some freshness in the form of fresh herbs, spices or onion, the variety and amount is you choice. We like to add some chipotle chili powder and green onions.

When it comes to heating the pizza, you want to be careful. Don't just plop it on the rack in the oven or it will fall through. Use a non-stick pan or a baking pan for the pizza.

Pre-heat your broiler. Place the pizza under the broiler and cook until the cheese has melted. Since the cheese is atop the refried beans, the beans will also be hot. This will only take about 2 or 3 minutes.

Take the pizza from the broiler and cut into quarters. Can it get any more simple? This is a great quick and somewhat healthy snack and perfect for those hot summer days when you just don't feel like cooking!
