1 LB of fresh spinach
1LB of fresh kale
1LB of fresh arugula
1 fresh whole fennel bulb, diced
2 cloves of garlic, minced
1 white, sweet onion, diced
1/2 container of feta cheese, crumbled
1/2 LB of (Farmers market) Diablo Grande Chili Peppers, diced
The Diablo Grande comes from the same group that includes jalapenos, poblanos, cayenne, and Serrano peppers. The fruits of this chile start out yellow-green and ripen to red, with a narrow crescent-shape and somewhat thick flesh. They may be harvested while green or red. These peppers are delicious when used fresh, pickled, or cooked in dishes.
Saute with Olive oil, fennel, onions, garlic, and chili's until softened. Add in all the greens, slowly and let cook down. Then stir in all the flavors after yours green have softened. Then add slowly the feta cheese and remove from the heat.
Serve alone as a side dish with grilled chicken or pork chop. A vegetable quiche is a nice idea, adding a couple of eggs and making a crustless side dish or main course. Enjoy!
