Cherokee Casserole

This recipe is a comforting childhood favorite of many. There are several versions of Cherokee casserole but this one features ground turkey (you can use ground beef if you prefer), Herbs de Provence and a smoked provolone pizza cheese blend. Traditional versions of this recipe use cheddar cheese which is also delicious.

1 large onion, chopped

1 pkg lean ground turkey

2 small cans of cream of mushroom soup

1 15 ounce can of diced tomatoes

1 1/2-2 pkg frozen cooked rice (basmati, brown or jasmine works well)

1 tsp Herbs de Provence or Italian seasoning

black pepper and sea salt to taste

1 8 ounce pkg of pizza style cheese (smoked provolone, mozzarella and parmesan)*

*If you can't find the pizza blend, an Italian blend would work well too

Step 1

Preheat oven to 375

Step 2

In a large dutch oven or pot, brown turkey. Season with salt and pepper. Add chopped onion and cook until soft, approx 5 min. Add cream of mushroom soup, tomatoes and Herbs de Provence. Simmer for 5 min. Add rice and simmer until rice is heated through. Season to taste with salt and pepper.

Step 3

Cheese can be added directly on top of mixture in the pot and placed in the oven for 20-25 min until bubbly or your can pour mixture into a casserole dish, top with cheese and bake for 20-25 min until brown and bubbly. Let casserole sit for 5-10 min before serving. Casserole can be served with a green salad and crusty french bread if desired. Enjoy!
