
We recently had the opportunity to sample free raised veal from Strauss Brands, a third-generation veal and lamb company (www.freeraised.com), which has recently introduced their line-up of veal products to Whole Foods Markets in Southern California (www.wholefoods.com).
We've boycotted veal for quite some time due to factory farming practices, but are happy to report that Strauss calves are pasture raised and free to roam, fed on mother's milk and never administered antibiotics or growth hormones. The color, flavor and texture of this meat is a testament to these compassionate practices.
The recipe for preparing Veal Chop with Ratatouille and herb butter (pictured above) is one of several on their website. Compared with chicken or beef, free raised veal has less saturated fat and cholesterol. We were pleased to discover that Strauss brands offers ground veal as well as veal hot dogs (a favorite with the kiddies), making this meat choice very versatile as well as affordable. If you're cooking at home on Easter Sunday, Strauss Brand free raised veal is worth checking out as your main entree choice.
