Italian sugar cookies are similar to their American counterpart except that, of course, they have less sugar. Italians do not typically roll their cookies but I wanted to use my cookie cutters and this dough is easy to work. You can roll them as soon as they leave the mixer. Or you may simply drop them by teaspoonfuls as the Italians do. Either way, they're delicious. And the best thing? On this snowy day of Christmas Eve, you do not need to venture outside for ingredients. They're probably all in your pantry.
Italian Sugar Cookie Recipe - makes 64 cookies
1/2 cup butter, softened and cut into pieces
3/4 cup sugar
3 eggs
2 tsp vanilla extract
3 cups flour
1 tbl baking powder
Italian Sugar Cookie Preparation
Lightly spray your baking pans and preheat the oven to 350 degrees F. In a medium bowl, combine flour and baking powder. In a large bowl, cream butter and sugar. Add your eggs and mix well. Add your extract and mix.
Add your flour in thirds. Mix after each addition. Dough will combine quickly.
Drop cookies by teaspoonsfuls or roll and use cookie cutters. If you decide to roll them lightly sprinkle your rolling area with flour. Decorate with sprinkles. Bake at 350 degrees F for 12 minutes. Cool on wire rack. Enjoy.
