Are you a fan of mozzarella di bufala? Bufala mozzarella is a delicious type of fresh mozzarella cheese from Italy that is made from the milk of water buffalo. If you enjoy the creamy taste of bufala, you will be captivated by the intense flavors of Burrata cheese.

Burrata cheese is a rare delicacy that hails from the Puglia region of Italy (near the bottom of the boot). Similar to bufala, burrata cheese comes in little pouches of mozzarrella that are filled with a creamy panna that oozes out when cut. It come wrapped in a green leaf.  Incredibly fresh, buttery, and rich, this cheese will cause an explosion of taste sensations in your mouth.

Because of its freshness, burrata cheese can be a challenge to find as it must be used within a couple of days. It’s generally flown in from Italy, but the restaurant that features it may have to change their menu at the last minute if the cheese misses its flight!

Although a rare find, there are several places that occasionally feature burrata cheese. Nuova Italia restaurant in Addison slices the delicacy over fresh, peppery arugula and razor-thin slices of imported parma prosciutto, resulting in an ambrosia that will delight your senses.

Whole Foods markets (locations around Chicago) carries burrata cheese during the spring and summer months. “You just have to keep asking if we have it, as it sells extremely fast when we do get it in. It is an extremely popular gourmet treat,” claims the cheese expert at the Whole Foods in River Forest. A pricey indulgence, it generally ranges in price from $12.99 per ball; but you do not need to use a lot as the flavor is intensely concentrated.

Because of its rich, creamy texture, burrata cheese is definitely not a low calorie treat. But do as the Italians and French do – enjoy just a bit of this rich flavor sensation with fresh tomatoes or over pasta, drizzled with a high quality extra virgin olive oil or a balsamic vinegar.

It’s the Mediterranean way to savor every morsel of your food slowly – mindful eating while enjoying fresh, real food!
