Niki Bradshaw is a registered dietitian/licensed nutritionist. She earned her undergrad degree from Middle Tennessee State University, with a major in nutrition and food science and a minor in chemistry. Before passing the RD exam in 2001, Niki completed her dietitic internship through Utah State University's distance program in Colorado. She has been a RD for over nine years. She currently owns her own consulting company, NikiNutrition, LLC, and does conctract work with local long-term care and assisted living facilities and hospitals. She has traveled all over the United States, including Hawaii, Puerto Rico and the Bahamas, and has dined at some of the most upscale restaurants. Niki's education and background as a dietitian/nutritionist qualifies her to determine which menu items offer the highest nutritional value, while her dining experience qualifies her to identify unique culinary offerings.
