This full bodied dip almost makes a meal in itself. If you're entertaining a large crowd, be sure to double or triple the recipe. Don't be afraid to add a cup of precooked salad shrimp, or feel free to substitute your favorite seafood in place of the crab. Lightly sauteed scallops go well in this recipe as well. To keep this treat low carb serve with vegetables instead of toast or crackers.
Dancing Cajun Crab Dip
1 cup mayonnaise
8 ounces sour cream
1 - 14 ounce can artichoke hearts, drained and chopped
1 cup shredded Swiss cheese
1 cup crab meat, drained
1/4 cup shitake mushrooms, chopped
1/4 cup yellow or red onion, minced
4 garlic cloves, minced
2 teaspoons parsley
2 teaspoons jalapeño pepper, diced
1/4 teaspoon cayenne pepper
Preheat oven to 350 degrees. In a 1-1/2 quart casserole dish, combine all ingredients. Bake uncovered for 30 minutes. Serve immediately. Great on toasted sourdough bread.
