Even though sweet potatoes may be part of the Thanksgiving dinner tradition, these naturally sweet vegetables can be added to your meals throughout the year.
Sweet potatoes are nutritional all-stars; one of the best vegetables you can eat! They’re loaded with carotenoids, vitamin A, vitamin C, potassium, and fiber. Sweet potatoes also is considered an antidiabetic food, which means that they stabilize blood sugar and lower insulin resistance.
A simple and delicious way to incorporate sweet potatoes into your diet is sweet potato fries. Sweet potatoes fries are a fun finger food or side dish, and always a real crowd-pleaser. Give them a try at your next summer barbecue!
Sweet Potato Fries
Makes 2-3 servings
Ingredients:
2 small sweet potatoes
1 tsp olive oil
1/2 tsp cinnamon
1/4 tsp paprika
Directions:
Preheat oven to 425*F.
Chop sweet potatoes into “fries.”
In a plastic Ziplock bag, add sweet potato fries, olive oil, cinnamon, and paprika.
Seal the bag and shake thoroughly to coat sweet potato fries.
Spread the fries onto a baking sheet covered in tin foil.
Bake for 25-30 minutes, turning fries every 10 minutes or so.
Allow to cool for about 5 minutes and serve warm (or cold) with low-fat sour cream, Ranch dressing, ketchup, or horseradish.
