What is Lemon Poppy Seed Cake without creamy lemon frosting? This frosting is a makeover from full calorie and full fat frosting. Leaving some of the fat and sugar in keeps the frosting from being dry and unfullfilling. Good things come in small packaging and that is doubly so in desserts. It is much better for your mind and body to indulge in something rich and delicious but in small amounts than to eat large amounts of a dry, tasteless fake out of a dessert.Portion control is the key to a healthy lifestyle. If it helps your self control, cut your cake or other desserts into serving sizes, tuck into zip bags or freezer containers and put in the freezer. They will only take a few minutes to thaw but will be out of reach when you are walking by and temptation strikes.
Those of us with the New Year's resolution to eat healthier are going to battle the bulge this year and win. Don't have a bulge? Don't worry, this is the way to keep from getting one. And remember, even thin people can have high cholesterol and other health issues such as diabetes which can be at least partially controlled with a diet that's low in fat and sugar. As always, talk to your doctor about the amount of carbohydrates, sugar, fat and calories you should have in your daily diet. And remember, use a small plate; we eat with our eyes and if the plate is full, our eyes will think our tummy is too!
Ingredients:
Lemon Cream Cheese Frosting
- 3 Tbsp light butter, softened
- 3 oz reduced or fat free cream cheese, softened
- 2 cups Splenda granulated (or confectioner's sugar, if you are not watching your sugar)
- Dash salt
- Zest of 1 lemon (2-3 tsp)
- 2 or 2 1/2 Tablespoons fresh lemon juice (or refrigerated if on hand)
Directions:
- In a medium bowl, beat butter and cream cheese until smooth and well blended.
- Add the Splenda or powdered sugar half at a time, stirring to mix well.
- Add the salt, zest, and lemon juice until the frosting is the desired consistency. If too thin, use more cream cheese or a bit of cornstarch or powdered sugar to thicken.
- Spread on cake or cupcakes. If desired, put a decorator tip into cut corner of baggie or zippered bag, squeezing frosting through tip. If you don't have a tip, cut the hole in the bag very small and squeeze slowly through the hole in the corner of the bag, moving your hand up and down as you go round the cake to make a scalloped effect.
