Sauces for turkey: 4 unique, savory choices for a memorable dinner

Sure, brown gravy is the traditional saucy accompaniment to your Thanksgiving turkey, but is it really that good? Think about it: if plain, brown gravy were the only sauce you were offered at a restaurant, you'd think you were at the diner.

Some traditions really are worth breaking. This year, give your turkey the treatment it deserves with a gourmet sauce that reflects all the hard work you've done cooking your dinner. If you think your Aunt Betty will really get her  in the knickers in the proverbial twist, go ahead and make some brown gravy too.

Bobby Flay's Pomegranate Sauce Recipe

If there's any cook who knows how to give meat the treatment, it's Bobby Flay. This wine-rich pomegranate-spiked turkey sauce proves he knows what to top it with, too. For an extra-special Thanksgiving presentation, serve with Bobby Flay's Wild Rice and Goat Cheese Stuffing.

Maple Corn Sauce Recipe

The New York Times' Maple Corn Sauce is a standout recipe that will get attention from your dinner guests, yet is still firmly rooted in Thanksgiving tradition. Fresh corn, cream, a touch of maple syrup --you might want to have this turkey sauce all by itself!

Madeira Gravy Recipe

This tukey gravy recipe takes traditional giblet gravy to dizzying heights with the addition of the sweet, mellow flavor of Portugese Madeira to your turkey's hot pan drippings. Follow the instructions for seasoning your bird as well, and the taste of fresh herbs, shallots and olive oil will further enhance your Madeira gravy.

Ginger-Scallion Sauce Recipe

Even persnickety folks who think they don't like ethnic foods usually appreciate the savory simplicity of classic Chinese dishes. David Chang's ginger-scallion turkey sauce is decidedly classic, based on his favorite sauce at Chinatown's Great NY Noodletown.

Go ahead: break tradition. Your gravy boat will practically blush from all the attention.

Make this year's turkey extra-special even without sauce by basting it in one of these gourmet marinades.
