Breakfast baked goods are a treat for those on a gluten-free diet.  The Celiac Maniac Bakery, from Oregon, has allowed gluten-free breakfast diners to once again indulge in an english muffin. 


Celiac Maniac english muffins are one of a very few number of gluten-free english muffins available in the United States.  The package of four muffins should be frozen for optimal keeping.  Once defrosted, the muffins should be toasted.  This keeps the outside slightly crispy and the inside moist and fluffy.  They even have the little nooks and crannies that traditional english muffins have.


Two varieties are available and both are delicious.  The traditional version is wonderful by itself or can be used to make mini-pizzas or eggs benedict.  The cinnamon-raisin version is perfect with a little butter or even pumpkin butter.

    Thanks for the great review Jen! I wanted to add just a couple things. Our English Muffins come in packages of 6 and are fork split so they can go straight from the freezer to the toaster (no need to defrost). They are all gluten-free, dairy-free, egg-free, soy-free and nut-free. You can order them by visiting our website and clicking "The Celiac Maniac Online Store" link.
