Cake in the Box Bakery now Open in Duluth, GA (and offers gluten-free cakes!)

On September 28, 2009, Cake in the Box bakery in Duluth, GA opened their doors for pick-up orders!

The exciting thing about this for the gluten-free community is that these are professional cakes that can be made to suit ANY food allergy, intolerance or sensitivity.

I asked the Cake in the Box owner, Trenise, about her inspiration to offer allergy-friendly cakes, and she explained that she has two kids with life-threatening allergies to nuts.

Her son was originally diagnosed with allergies to eggs, wheat, soy and all nuts in 2003, and she had to learn how to convert her kitchen into an allergy-friendly zone.  Her daughter, born in 2005 has similar allergies. Luckily, her little boy grew out of many of his allergies by age three, except for nuts.

This is why her facility is 100% nut-free, and how she knows how to avoid cross-contamination when making allergy-friendly cakes.

Trenise emailed me about how her heart breaks when she cannot lether kids have special treats because the store or restaurant has been contaminated with nuts, and not properly cleaned. She hated to see her children feeling left out because of their allergies.  So, about her bakery, she says:

Children deserve a chance to have a special birthday and a bride deserves a beautiful wedding cake that is safe for her to eat if she has food allergies.  I wanted to make a safe bakery for those that are so often left out. People like my children, people like you.
