Matzo Ball Soup for Hanukkah

Whether you celebrate Hanukkah or not, Matzo Ball Soup is simple to make and terrific to enjoy all year long.  There's no soup that's easier to prepare than Matzo Ball Soup, especially if you use a canned or boxed broth.  All soup is better with homemade stock, but if none is on-hand, you'll still appreciate the flavor of the matzo balls, which are generally made with egg and matzo.  For years you've probably seen the Manischewitz Matzo Ball Soup Mix in supermarkets and if you've wondered if it's any good -- It is.  The powdered broth it comes with isn't necessary the best, but if it's substituted for a homemade or another favorite stock, you've got yourself a fabulous Hanukkah meal.
