Frozen peach pie recipe: Ice cream in a graham cracker crust

Hot & bothered? Cool off with this easy ice cream dessert! Frozen Peach Pie made with fresh or frozen peaches, topped off with raspberry coulis, piled high in a graham cracker crust. A totally refreshing summertime treat!

 

Frozen Peach Pie Recipe

  • 1 - 9 inch Graham Cracker Crust, baked
  • 1 quart Breyers All Natural Peach Ice Cream 
  • 1 1/2 cups chopped fresh or frozen peaches
  • 1/2 cup peach jam or preserves

 

Raspberry Coulis Recipe

  • 1 cup fresh or frozen raspberries
  • 1/4 cup sugar
  • 1 Tablespoon fresh lemon juice
  • Using an immersion blender or regular blender, whip up all coulis ingredients until smooth.
  • Refrigerate until ready to use.

 

How To Make a Peach Ice Cream Pie

  • Let ice cream soften just enough to be able to scoop.
  • Fold peaches and jam into the ice cream, and spread evenly into the graham cracker crust. Smooth the top with a spatula.
  • Freeze 4 hours or longer. Cover with plastic wrap until ready to serve.
  • Make the Raspberry Coulis and refrigerate until ready to serve.
  • Remove Peach Ice Cream Pie 20 minutes before serving.
  • Drizzle the top with raspberry sauce before or after slicing and plating the pie.
  • Serves 8.

 

Ben & Jerry's or Breyers Ice Cream?

  • Both brands of ice cream are delicious. Having lived in Vermont for nearly 10 years, I adore the ice cream these two hippies made famous. However, as good as it is, there are a lot more calories per serving. You'll have to "weigh" the pros and the cons of taste over butter fat. You decide!
  • Breyers All Natural Peach Ice Cream Ingredients: Milk, peaches, sugar, cream, whey, natural flavor, natural tara gum. 120 calories per serving.
  • Ben & Jerry's Willie Nelson's Country Peach Cobbler Ice Cream Ingredients: Cream, Peaches, Skim Milk, Water, Liquid Sugar, Sugar, Egg Yolks, Dextrose, Wheat Flour, Butter, Soybean Oil, Natural Flavors, Eggs, Guar Gum, Pectin, Cinnamon, Turmeric and Annatto (For Color), Salt, Citric Acid, Lemon Juice Concentrate, Carrageenan. This would be an awesome choice if you like chunks of cinnamon-sugar shortbread pieces in your ice cream. 220 calories per serving.
