Shrimp Macaroni & Cheese is a cure for the rainy day blues

Food for the soul, or at least for a rainy day.

Spring seemed to skip by Orlando this week with three fleeting days of sun only to be swallowed by a downtrodden day of rain today. Oh, climate gods why do you mock us so? (Shaking fist angrily in the air.) If wishing for better weather still doesn't give you that warm all over feeling when its soggy and wet outside, then why not try my Shrimp Macaroni & Cheese but guaranteed to light the belly's flame?  

My recipe uses two cheese, white cheddar and fontinella. Fontinella is a stronger tasting (classified by cheese mongers as 'mild') softer semi-hard cheese. If this Italian cheese might not please your palette, good substitutes are more white cheddar cheese or go with an even stronger cheese asiago. Tonight try Shrimp Macaroni & Cheese as a simple and appetizing cure for the rainy day blues.
