Summer is made for salads, and this pasta salad is a step above old-fashioned macaroni salad with the addition of fresh cooked shrimp, and a tangy dressing. This is always a hit at pot-lucks and barbecues. Need help cooking shrimp? See Shrimp salad – cooking shrimp for tips.
Pasta Salad with Shrimp Recipe
Makes approximately 14 cups
- 1lb large elbow macaroni, or pasta of your choice, cooked
- 1lb shrimp, cleaned and cooked
- 1 cup celery, chopped
- 1/2 cup red onion, chopped
- 1/4 cup green onion, chopped
- 1/4 cup chopped cilantro or flat leaf parsley
- 8oz. mild cheddar cheese, cubed
- 2 TBS dill pickle relish
- 2 TBS sweet pickle relish
Dressing:
- 1 cup mayonnaise
- 2 TBS extra virgin olive oil
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup sugar
- 2 TBS Worcestershire sauce
- 1 tsp. hot sauce, or to taste
- 1/2 tsp. salt, or to taste
- fresh ground pepper
How to Make Pasta Salad with Shrimp
- In a small bowl stir together the mayonnaise and olive oil until smooth.
- Add remaining ingredients, mix well; refrigerate.
- In a large bowl, combine salad ingredients; toss to mix.
- Stir in dressing.
- Chill until ready to serve.
