What are your two favorite dishes at Qdoba? Naked burritos with cilantro studded rice and your choice of beans? Ooey gooey nachos topped with mild or hot salsa? Spicy Mexican gumbo where the tortilla soup is the star? Now you can have two of your favorites in one sitting.

Qdoba Mexican Grill, born right here in Denver in 1995, has created a brand new combination menu. The Craft 2 menu is the perfect way to enjoy two dishes within one entrée. When ordering from Craft 2, you choose two of the following smaller sized items:

  • Naked Taco Salad
  • Single taco
  • Grilled quesadilla
  • Mexican Gumbo
  • Naked Burrito
  • Tortilla soup
  • Nachos

Pick two and you have your perfect meal. You still may opt for all of the standard fixin's, you're just enjoying two instead of one!

Some combinations even keep the calories low - around 600 or less. Qdoba's extra lean pork is a low-fat option available in the tacos or naked burritos. Qdoba is so confident you'll love their awesome pork, they want to share the recipe. Qdoba Slow Cooked Pork with green chilies and tomatillos

  • 1 Boneless pork shoulder roast
  • 1 White onion, cut into thin strips
  • 2 Poblano chilies, cut into thin strips
  • 2 Jalapeños, minced
  • 2 Anaheim or Hatch green chilies, cut into thin strips
  • 2 C. tomatillos, husked, cut into large chunks
  • 3 cloves fresh garlic, peeled, sliced
  • 1 T. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper

Cut onions into fine strips, approx 1/8 inch thick, and place in bottom of crock pot. Wash and cut tomatillos and place half in bottom of crock pot. Place pork roast into crock pot on top of onions and tomatillos. Sprinkle with salt, pepper, and garlic powder. Place remaining tomatillos, fresh garlic, and cut chilies on top of pork.

Turn crock pot on low and cook for a minimum of six hours. If your crock pot has a high setting you can cook on high for the first two hours, but don't leave on high too long as pork will become tough. After six hours, shred pork with tongs or forks, removing any fat prior to shredding.

Serve with warm tortillas, flavorful salsa, pico de gallo, minced onions, chopped cilantro, and avocados. Eat and enjoy!

Qdoba pico de gallo

  • 1 1/4 C. seeded, diced fresh tomatoes
  • 1/4 C. diced red onion
  • 1 T. diced jalapeños, or to taste
  • 1 T. fresh minced garlic
  • Fresh squeezed juice from two limes
  • 2 T. fresh chopped cilantro, more or less to taste
  • Kosher salt and pepper to taste

Combine all fresh ingredients in bowl. Add lime juice, cilantro, and salt and pepper. Toss together. Enjoy with freshly made Qdoba chips and good company!
