Last night, a Middletown area landmark went up in flames. The 62 foot Jesus statue at the Solid Rock Church in Monroe was struck down by an ironic act of God. Love him or hate him, Jesus was known worldwide. Comedian Heywood Banks even wrote a song in parady of the statue, "Big Butter Jesus".That nickname, as well as "Touchdown Jesus", have stuck and are commonly used by residents of the area when referring to the statue. The loss of such an icon has created a huge controversy-should the church rebuild the $500,000 statue made of styrofoam, resin and wood or should they use it for more practical purposes during this economic downturn. The church leaders will ultimately do what they deem best and the rest of us will scratch our heads in wonder, asking ourselves "Why?". I say we eulogize the big guy in the least controversial way possible-by enjoying a freshly baked butter cake. Gather together 23 of your closest friends and dig into this decadent cake-it serves 24. EASY BUTTER CAKE
Ingredients
- 1 cup butter
- 1 package yellow cake mix
- 4 eggs
- 2 cups powdered sugar
- 1 (8) ounce package cream cheese, softened
Directions
Preheat oven to 350 degrees F. Butter a 9X13 pan and set aside. Melt butter slightly and mix it with the cake mix and 2 eggs. Pour into prepared pan. Mix remaining 2 eggs with the cream cheese and powdered sugar. Pour evenly over top of the cake batter mixture, do not stir. Bake 30-40 minutes.
