A new study by the Intramural Research Program of the National Institutes of Health, National Institute of Diabetes and Digestive and Kidney Diseases shows that the U.S. wastes 40 percent of all food, and food waste has increased by more than 50 percent since 1974.
The value of the wasted food stands at more than $64 billion each year at the same time that U.S. households with food insecurity climbed from 4.7 million to 6.7 million since 2007 according to the U.S. Department of Agriculture. Food insecurity indicates that a family's food patterns are disrupted as a result of insufficient funds to purchase food for part or all of the year.
The new report from the National Institute of Diabetes and Digestive and Kidney Diseases supercedes previous reports that food waste stood at 30% of all food in the United States.
