KentuckyDerby pie is quite easily one of the richest, most decadent desserts you can make. Served traditionally during Kentucky Derby days, derby pie is a treat any time of the year, and makes a great dessert for holiday parties and potluck dinners. In this article, we will discuss how to make derby pie.
3 oz. cream cheese, softened
1 c. flour
2 eggs
1/4 lb. butter, melted
1/3 c. flour
1 c. semi-sweet chocolate chips
1 c. nuts, chopped
1 c. sugar
1 TB. bourbon or 1 tsp vanilla
1/8 tsp. salt
1. Cream 4 TBS Butter and cheese. Add 1 cup flour. Roll in wax paper and chill 1 hour. Roll dough out and fit into 9 inch pie pan.
Filling
1/2 cup butter unsalted melted
2 eggs
1 cup sugar
1/2 cup flour
1 cup semi-sweet chocolate chips
1-1/2 cups pecans, chopped
2 T.B. bourbon
1. Beat eggs with cooled butter. Add flour and sugar. Beat until mixed well.
2. Gently fold in pecans, chocolate and bourbon. Pour into unbaked pie shell.
