Trying to find a prepared dried onion soup mix without monosodium glutamate (MSG) is a nearly impossible task. MSG lurks in most commercial onion soup mix and chicken bouillon (liquid and dry) – but you can make your own MSG-free dried onion soup mix.
Health food stores often sell MSG-free bouillon. Read packaging carefully to avoid MSG.
Here is a recipe suggested by Michael B. Jacobs,chef-owner of Mediter Asia Consulting, Inc., with some modifications.
Healthy dried onion soup
Ingredients:
• Onion powder (salt-free)
• Dehydrated onions
• Garlic powder (salt-free)
• Dry vegetable or chicken bouillon powder
• Touch of dry parsley
• Salt and pepper to taste
Instructions:
Mix dry ingredients. Flavor with a few squirts of Crystal Hot Sauce and Worcestershire sauce.
If desired, reconstitute dry onions and add them to the dry ingredients to enhance the onion flavor.
Badia Spices suggests replacing fresh onions with dried onions in any dishby mixing an equal amount of dried onions and water.
Then let the mixture sit for 10 minutes.
Pour the mixture over the brisket, then follow the brisket recipe.
Cooking tips:
Traditional dried onion soup is made with half beef stock and half chicken stock. Read packaging carefully to avoid MSG.
