Oatmeal is a staple in most athletes diet. It's also however bland. Some marathon runner eat oatmeal with peanut butter mixed in. Others love to add maple syrup. If you exercise in the morning, you will want to add extra protein to your breakfast. Here is a recipe for "Fruity Fit Oatmeal Pancakes." This recipe is high in protein, low in calorie, high volume and all natural! Enjoy these on any occasion or after your kick butt workout!
Ingredients:
1/2 c Steel Cut Oatmeal (cooked)
1/3 c Mixed Berries or fruit of choice (frozen or fresh, your choice)
1/2 c Egg Whites
1 pkt Stevia (Truvia, Stevia in The Raw or other non calorie sweetner like Splenda)
2 tbsp Non Fat Greek Yogurt (optional)
sprinkle of walnuts or almonds (optional)
In a blender or food processor mix together oatmeal, egg whites, berries and a half packet of stevia non-calorie sweetener. Pour 1/3 of the mixture into a greased skillet on medium. Let sit until edges look set or middle begins to look set, flip over for 2 more minutes or until desired darkness is achieved. Transfer to a plate and top with Greek yogurt and nuts if desired.
