St Patrick's Day healthy green recipes

St Patrick's Day in my household always meant corned beef and cabbage.   Obviously we know that steamed cabbage, and carrots are good for you, and to be honest the corned beef ain't all that bad as long as you trim the fat.   

With 213 calories per 3 oz serving, this beef also doubles as a great hangover meal because it's got a good amount of B vitamins.  So if you were partying in Southie this weekend and are still feeling the pains of your actions, this meal will satisfy without over doing it.  

Still, it's rather high in sodium and fat so if you are vegetarian or are watching your sodium intake, for a fun new twist to an old favorite try adding in some green side dishes featuring nutrient dense leafy greens like kale, collard greens or bok choy.  

These dishes can be intimidating since many have no idea how to prepare them.  First, you should wash off the greens and then pull them off the rinds of the leaves creating bite size pieces.  The greens cook down to about 1/4th of what they look like. 

Add about a tablespoon of extra virgin olive oil to a heated skillet, as well as 2 chopped garlic cloves.  Add in about a pound to two pounds of kale or collards and saute until the greens wilt down.  Add in some white beans or slivered almonds for extra crunch.  For more ideas check out the St Patrick's Day Green Recipes video on YouTube as well as these yummy recipes:

Some other quick and easy ways to add more green to your diet are adding spinach to your sandwich instead of iceberg lettuce.   My favorite quick sandwich when I'm in a hurry is a turkey roll up with dijon mustard, sprouts, and spinach on a Joseph's flax and whole grain tortilla.  You can also spice up a can of soup by mixing in some sauteed kale or collard greens.  Black bean soup tastes great with this addition.

Lastly, I think next year I'll run the Southie 5K the day of the parade.  It seems like a fun run.
