
Cardoons at the Union Square Greenmarket
No, that's not celery. Cardoons may not be well known here in the US, but in Italy they are a staple winter vegetable. Like their distant cousin the artichoke, they are basically an edible thistle. Also like the artichoke, they require a lot of prepping before cooking: the leaves are trimmed, as are the spines and the fibers on the stalks. At the Union Square Greenmarket they were going for a very reasonable $5 per plant.
