Easter bunnies need Easter brunch as much as we do.

It's fine to join the Easter hordes for the city parade on Sunday, stopping for some obligatory eggs and mimosas, but why not opt for a tastier Easter brunch in Brooklyn? Here are three less traditional options for your morning of spring renewal.

Pacificana, a dim sum king in Sunset Park, will have its carts rolling throughout the afternoon, bearing small plates of pastries, dumplings, noodles, and rice dishes priced for paupers starting at less than $5, along with their usual full menu of Cantonese classics. (718) 871-2880

Sweet and spicy rules the home-cooked Caribbean brunch at Soule Restaurant in Fort Greene. Locals love the saucy jerk chicken wings spiked with chopped mango salsa, the salmon in a thick coconut milk sauce, the classic deep-fried catfish, and mountainous starchy sides, like yams and rice. Wash it down with a strong glass of tangy red sorrel, and bring those firefighters, police officers, and hospitals employees with you; emergency workers get a 5% discount. (718) 399-7200

And El Viejo Yayo in Park Slope serves a great morning meal for big families with tiny kids. Servers learn toddlers' first names and sidestep their antics expertly in the restaurant aisles while delivering tasty, generous fare. Dominican fried cheese, perfect roast chicken, frothy mixed fruit shakes, and strong margaritas are served alongside the fattest, most satisfying pancake stacks on Ninth Street. (718) 369-9651
