Eat for Health is Dr. Joel Fuhrman's nutritional prescription for superior health. Let's dig in to chapter one...
The medical case stories that Dr. Fuhrman offers are nothing other than amazing. The idea that the foods that everyone knows to be full of nutrients can dissolve deadly and debilitating conditions such as heart disease, lupus, fibromyalgia, diabetic retinopathy, and psoriatic arthritis, astounds me. And like Dr. Fuhrman, I have seen it happen (just not as often).
I don't think there is a body who would deny that vegetables, fruits, whole grains, and beans feed your body with necessary nutrients. Isn't it logical, then, to think that eating more of the nutritious foods would give you a wider variety of nutrients that improve your health? Why is it that people have come to depend on pasta, chicken, and olive oil for good health? As Dr. Fuhrman says, "none of those foods are rich in nutrients," just calories, animal protein, fat (lots of it), and refined carbohydrates.
The secret to superior health, Dr. Fuhrman writes, is to "eat more nutrient-rich foods and less high-calorie, low-nutrient foods."
He follows his secret with what may be considered to be outlandish claim. He states, "It works because the more high-nutrient food you consume, the less low-nutrient food you desire." Now that's revolutionary! How does that work?
