John Burtka is the vintner at Michigan's Cherry Creek Cellars. The Burtka family has been growing grapes and making fine wines for 100 years. They currently have two locations, one in Cement City and one in Albion.

The Cherry Creek Cellars website has great food ideas and recommends pairing their Pinot Noir with any of the following:  braised chicken, cold duck, rabbit, charcuterie, partridge, roasted turkey, broiled salmon, veal, truffles, hard cheeses like Gruyeres.

They make fine, hand-crafted wines. A partial wine list includes:

  • Montage, a blend of Cabernet Sauvignon and Chancellor Noir
  • Enigma, blackberry and black currant, dark plum and a melange of wild berries
  • Pinot Noir, dark cherry fruit, dried rose pedals, dried leaves and forest floor characteristics
  • Ninja Red (Black Top), reminiscent of a good Italian Lambrusco
  • Ninja Red (Red Top), fruity, semi sweet
  • Maria Maria Sangria, citrus flavored
  • Michigan Cherry, cherry flavor with a hint of spice
  • Cranberry Passion, natural cranberry tartness
  • Jazz, a combination of award winning Red Wine and award winning Fetter Hahn Black Raspberry Wine
  • Premier Cuvee, made in the method of Champagne using traditional grape varieties of Chardonnay & Pinot Noir
  • Desire, fruity, yeasty and smooth
  • Chardonnay, quintessential Michigan Chardonnay
  • Pinot Grigio, citrus fruit (grapefruit and orange zest), with pleasing pear and peach undertones
  • Summer Breeze, floral nose, classic German aftertaste

Their website has some great recipe ideas including Mushroom & Leak Tartlets by Chef Marian Gray:

Ingredients

  • 2 lbs-gourmet mixed mushrooms,(finely chopped, shitake,oyster,crimini)
  • 2 leeks finely julienned
  • 4 oz thinly diced Pancetta light fry
  • 4 tbls lard, goose grease
  • 2 tbls organic butter, fresh ground sea salt and black pepper
  • 1 cup Cherry Creek Cellars Montage
  • 2-4 cloves finely minced garlic
  • 36 prebaked phyllo cups

Over a medium heat, melt fat, then add mushrooms and leeks. Cook slowly over low heat until dry, approximately one hour. Add pancetta, salt and pepper. Mix well. Remove to a heatproof dish. Add Montage to deglaze pan, scraping gently. Reduce to half. Return mushroom mix to pan to warm. Spoon by teaspoon into prebaked phyllo cups.
