This quick and easy recipe is loaded with fresh apple, dates, and pecans. Fragrant with cinnamon and sweetened with honey and a bit of brown sugar, it is kicked up another notch with a surprise ingredient—cayenne pepper. The cayenne is subtle, just enough to add warmth to the tongue after a few bites, and it compliments the sweetness of the fruit and honey.

This fruity dish is loaded with wholesome ingredients and makes a delightful special breakfast, snack, or dessert. Serve it warm or cold, and top it with ice cream, whipped cream, or try plain yogurt or (our favorite) sour cream, drizzled with honey. Can you say yum?

The Recipe

Kicked Up Apple Date Honey Cake

  • 3 large apples, cored and diced
  • 1 cup chopped dates
  • 1 cup chopped pecans
  • 1 1/4 cup white whole wheat flour
  • 1 TBS baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. cayenne pepper
  • 1/4 cup brown sugar
  • 1/2 cup honey
  • 2 eggs, beaten
  • 3 TBS butter, melted

Preheat oven to 350 F. Butter a shallow casserole dish or large pie plate.

  1. In a large bowl combine the fruit and nuts.
  2. Mix together the dry ingredients, and stir into the fruit mixture until well combined.
  3. Add the honey and eggs, mix thoroughly.
  4. Turn into the casserole or large pie plate.
  5. Drizzle with the melted butter.
  6. Bake 40 minutes, or until golden brown.
