Grilled Pizza Dough

GRILLED PIZZA - So, you've got all your ingredients to make Grilled Pizza, but you have no idea where to start? How do you make pizza dough? How do you roll the pizza dough? Here's an easy homemade pizza dough recipe with suggestions on how to buy pizza dough.

How To Make Grilled Pizza

What About Pizza Dough?
You can make your own pizza dough with the recipe below. It'll make enough for two pizzas. But, if you're short on time, or just don't do dough, you can buy excellent quality, premade pizza dough from your local bakery or supermarket. Pizza dough usually comes packaged in 1 pound balls, frozen or thawed out, in white, wheat or a blend. The one pound pizza ball is just the right size for one large rectangular pizza. I never make round pizza, but that's just me. By making them rectangular, I can fit two pizzas on my grill at the same time, saving time and gas. If I have a crowd over, I can slap two more on the grill right after the first pizzas are done!

Homemade Pizza Dough Recipe

  • 1 package active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (105º F to 115º F)
  • 1 tablespoon flavored or extra-virgin olive oil
  • 3 cups all-purpose flour



How To Make Pizza Dough

  • In the bowl of an electric mixer, disolve yeast, sugar and 1/4 cup water. Let sit about 3 minutes.
  • Add the salt, oil, flour and the rest of the water, and using the dough attachment, mix on low speed. It should take about 5 minutes to knead the dough until it comes away from the sides of the bowl and starts to ride up the hook.
  • Finish kneading the dough by hand on a lightly floured surface. Place in a greased bowl, cover with a damp towel and place in a warm spot to double in size.
  • At this point, you can use the dough now, or the pizza dough can be placed in a plastic bag and refrigerated until ready to use.
  • Divide the dough into 2 equal pieces, and continue with the following directions.


How To "Roll" Out Pizza Dough

Sprinkle a work surface (I always use a big piece of heavy duty aluminum foil) with cornmeal. Throw the dough down like you're mad at it, flattening it and rolling it as you go. No rolling pin needed! Next, rub about a Tablespoon of good quality flavored olive oil on top of the dough. Experiment with Basil Oil, Roasted Garlic Oil, Roasted Chili Oil or whatever you have on hand. Whole Foods has some tantalizing flavors to stimulate, tickle and burn your taste buds!

Sprinkle some more cornmeal over the top, flip it over and do the other side with more oil. Flatten the dough out as much as you want. I try to make it fit a rectangular baking sheet. You can make it any shape you wish, but certainly never bigger than your grill area! Now, let it rest while you gather up all your utensils, sauce, toppings, wine, beer or frozen Margarita!
