Lemon Desserts for Spring

Spring is here, and with the change of seasons comes lots of fresh lemony desserts. Lemon Meringue Pies always tops the list and with good reason. It's a very nostalgic, old-fashioned recipe that reminds us of Grandma's kitchen. Here's some more Lemon Dessert Recipes that will hopefully put a spring back in your step!

Lemon Meringue Pie - Just like Grandma used to make, this Classic Lemon Meringue Pie is made with a flaky pie crust & tangy lemon filling piled high with sweet meringue topping. This recipe features a few easy secrets that will put an end to weepy and sliding meringue forever. The addition of cooked cornstarch gel stabilizes the meringue.

Lemon Poppy Seed Tarts - Decorated with a perfect edible pansy, Lemon Poppy Seed Tarts are just the thing for a special tea party, Easter, Mother's Day or just because! Make some with meringue and pile the others high with sweetened whipped cream. The tarts are easy to make because the dough is made in a food processor and doesn't have to be rolled out. Just roll into a ball, place in a tart pan, press into place with your fingers and bake!

Lemon Poppy Seed Muffins - Just the thought of lemon makes you pucker and salivate! These delicious Lemon Poppy Seed Muffins are a favorite with just about everyone. The vegan muffins have a tender, moist crumb and the poppy seeds give them a light crunch when you bite into one. Although they have lemon icing on the top, you can omit it if you need to stay away from refined sugar. Not vegan? You can also make regular Lemon Poppy Seed Muffins by substituting regular milk for soy, and using 4 eggs instead of the flaxseed egg-substitute. Either way, they're easy and delicious!

French Lemon Cream Tart - This is a Dorie Greenspan recipe from her book, Baking: From My Home To Yours. This French Lemon Tart is one of my favorite lemon desserts of all time. Similar to a Lemon Meringue Pie, this dessert is made with a sweet shortbread crust and pre-baked in a springform pan. The crust is then filled with the dreamiest French lemon filling and can be either piled high with whipped cream or topped with  meringue.

Lemon Tea Cake - Rich in butter and eggs, and soaked in sweet lemon syrup, this Lemon Poppy Seed Cake would be adorable in a bundt pan sprinkled with powdered sugar and edible pansies. The sugar and butter even out the flavors, culminating in a rich, fine velvety crumb cake. Simple enough to eat on a weeknight, yet fancy enough to be served at your next Sunday brunch. And oh so good with a cup of tea!

Lemon Bars - This recipe comes from the blog, Dinner & Dessert by Erin. These Lemon Bars are everything you want in a Lemon Bar. The crust is crisp and the filling is tart & tangy & sweet all at the same time. Make a batch for your next luncheon.
