Grilled Turkey Breast with Raspberry Dressing

With the arrival of fall so is the anticipation of holiday preparation.   We can almost smell the turkey as we plan for those Holiday meals.  The grill is still a handy tool for quick and easy meals.  This is a pre-holiday meal that can be ready in 2 hours.

You will need:

  • Raspberry jam
  • Stick of butter
  • Red cooking sherry
  • Spray bottle or bowl and brush

 

Prepare your seasoned grill for indirect heat placing a drip pan in the middle of grill.

Skin turkey breast and marinate in 2 parts cooking  sherry or red wine/ one part water for minimum of 30 minutes/or prepare early and thaw.

After marinating place turkey on medium heat grill over drip pans bone down.  Turn every 30 minutes.

In a bowl melt 1 stick butter and 4 tablespoons of raspberry jam.  Place in a spray bottle or bowl with brush.  Every time you turn your turkey spray or brush your meat.

Cover grill and let cook for 2hrs in indirect heat.

Dressing

  • 1 cup of whole raspberries
  • ½ cup of chicken broth
  • 1 tablespoon of raspberry jam
  • 4 cups of cornbread/ or bread crumbs
  • turkey drippings from grill-optional
  • 2 tablespoons of honey spice or Dijon mustard

In a bowl mix all the ingredients and bake for 30 minutes in 350 oven in an 8x10 pan.  Remove meat from grill and lie on top of dressing dish and serve.

Glaze with Raspberry butter mixture.
