Looks like Trader Joe’s has introduced another product to its portfolio—gluten-free pancake and waffle mix. Unlike some of the other mixes on the market, the ingredients are few and simple. The following are the list of ingredients:

Trader Joe’s Pancake and Waffle mix ingredients: Sweet brown rice flour, tapioca flour, arrowroot flour, rice milk powder, cream of tartar, xanthan gum, baking soda, sea salt, ground vanilla bean.

The instructions confused me slightly and I had to read them a couple of times because it didn’t specifically indicate whether the whole bag or just a cup or two of flour were going to be used. So, I just took an educated guess and decided to use the whole bag of flour, which equates to about 4 ¾ cups flour mix. Because I am not only gluten-free, but also dairy- and egg-free, I had to use an egg replacer instead of the required 2 eggs. After I mixed the batter and sampled it, it didn’t taste good so I decided to definitely add a few tablespoons of agave nectar syrup. The following is the recipe that I used:

Trader Joe’s Pancake recipe (w/ Rhonda’s twist):
Ingredients:
• 1 package Trader Joe’s pancake mix
• 2 egg replacers (use eggs if no allergies)
• 2 tablespoons oil
• 1 1/3 cups water
• 2 tablespoons agave nectar syrup

Instructions:
1. Preheat griddle pan over medium heat.
2. Whisk together egg replacers, oil, water, agave nectar, and pancake mix in a large bowl; mix until no lumps.
3. Spray griddle with non-stick cooking spray.
4. Pour batter onto hot griddle. Cook for about 1 minute; you will start to see the tiny bubbles in the batter. Flip when bottoms are golden brown or when bubbles have popped. Cook on other side until golden brown. Continue cooking until all of the batter has been used.

This recipe yields about 15 (3 to 4-inch round) pancakes.  These pancakes freeze well.  Be sure that the pancakes have cooled; then place them in between parchment paper or wax paper and store in a freezer bag before placing into the freezer.  I love cooking large batches and freezing!

Though I make my gluten-free pancakes with different ingredients, this pancake mix is okay with a few tweaks.  So, if you are looking for quick easy and tasty give the Trader Joe’s Pancake and Waffle mix a try!
