Vegan tea sandwiches for National Sandwich Day and Vegan Month

These vegan tea sandwiches are presented in honor of National Sandwich Day and Vegan Month. Tea sandwiches should be small and dainty, not much bigger than one or two bites. The also need to be so neat that you could eat them wearing white gloves. Here are three vegan tea sandwiches that fit that description.

Black olive sandwiches on pita triangles
Ingredients:

  • 1 cup of chopped black olives, well drained
  • 6 whole wheat vegan pita bread (check to label, but most are made without animal products)
  • 2 tablespoons or more of vegan (eggless) mayonnaise, enough to hold olives together.

Directions: Preheat oven to 350 degrees. Cut each pita into six triangles. Place them on a baking sheet and toast for about five minutes until they are just crisp, but not brittle. Allow to cool. Mix the olives with the mayonnaise and spread them on the triangles. Keep it pretty much to the center of the triangle so it won’t fall off the edges. You can garnish with parsley or a bit of cucumber if you like. Eat open-faced.

Note: You can use any kind of olives you like, but you may have to pit them and chop them yourself. Try it with Greek olives for a zipper flavor.

Spicy Hummus Wrap Recipe

  • 1 container of spicy hummus
  • chopped cucumber
  • chopped green bell pepper
  • chopped red onion
  • avocado sliced thin
  • whole leaf spinach, well cleaned
  • whole wheat tortillas made without lard.


Directions: To make the tortillas easier to roll, heat each one about 10 seconds in the microwave just before you use it. Spread the tortilla with the hummus. Lay the spinach on top of the hummus, add the cucumber, bell pepper, and onion. Spread them evenly on the spinach. Top with the avocado. Roll up like a jelly roll. Chill until time to serve.


Peanut Butter isn’t Just for Kids Sandwiches

Ingredients:

  • 1 cup peanut butter
  • ½ tsp.
  • ¼ cup shelled sunflower seeds
  • 2 Tbs. chopped dried fruit such as dried apricots, apples, or pears
  • Banana Split Tea Bread


Directions:
Mix the cinnamon into the peanut butter. Taste it. Adjust to taste. Stir in sunflower seeds and dried fruit. If it seems to thick to spread, you can add fruit juice a teaspoon or two at a time until it’s right. Peanut butter varies in consistency from brand to brand.

Trim the loaf of Banana Split Tea Bread according to the tea bread instructions. Do not use butter. Use the peanut butter mixture. Cut top with another slice of bread and chill sandwiches to make firm. Before serving cut each sandwich diagonally to form triangles.
