With the weather slowly becoming summer weather, we begin to look for something cool and refreshing. What can be more refreshing than a flavorful fresh fruit sorbet.

Sorbet is a frozen dessert consisting of a simple syrup and fresh fruit puree churned and frozen in an ice cream machine. I strongly believe the best way to truly enjoy a perfect sorbet is to simply use only the fruit you want without the added over sweetness of the sugar.

The following recipe does not require you to have an ice cream machine at home, but does require a blender. Fruit is first cleaned and peeled if necessary and chopped - it is then frozen over night. The following day the fruit is blended with a banana until smooth and then placed back into the freezer to harden. The banana is used to help give the sorbet a smoother creamier texture. For this recipe I have used mangoes, but you can use any fruit you like. Some work better than others due to varied water and fruit pulp content. The amount of banana can also be increased and decreased to your desire. Use this recipe as a guideline to your preferences.

* It is imperative to use fresh ripe fruit for the best flavor and texture. Choose the best fruit available and do not settle for anything less.

Sorbet

Ingredients:

  • 2 Mango
  • 1 Banana

Directions:

Rinse and peel the mangoes. Cut around pit and remove as much of the mango from the pit as possible. Chop fruit and place in a tightly sealed container. Freeze the mango overnight.

Place the banana and frozen chopped mango in the blender. Blend until smooth, stopping the machine and scraping the sides when necessary. Place puree back into a tightly sealed container and back into the freezer for at least 2 hours to harden.

This is a very simple and inexpensive technique to produce a flavorful refreshing sorbet at home - no ice cream machine needed!

July is Ice Cream Month at the Examiner.
