
With Mardi Gras 2009 just around the corner, another "Nawlins" original recipe is in order. Todays feature is a true "Prize". This is an original New Orleans recipe, handed down to me from my good ole' friend Ed. Remember Ed, I shared his "Jambalaya" recipe in an earlier feature. While we are at it, another New Orleans tradition is the Gumbo. That recipe also was shared in an earlier article. O.K. back to todays recipe. This is called B-B-Q shrimp, but it is not what you are thinking.
Well I told you back then, that Ed was a “tried and true” Creole boy! Ed was born and raised down there in the Bayou Country and he has lots of family spread through out the Bayou, too! Now one of Ed’s cousins, SUPPOSEDLY, created the recipe for the "Original New Orleans B-B-Q Shrimp". All I know is this, down in New Orleans; this is a “Prized” dish. This is pretty much the recipe, from what Ed told me…
"Original New Orleans B-B-Q Shrimp"
1 - cup Extra Virgin Olive Oil
1 – whole garlic bulb, peeled and chopped
2 - 3 pounds – large shrimps with heads and shells still on (16-20)
2 – teaspoons dried Oregano
1 – teaspoon dried Rosemary
1 – Bay leaf
2 - teaspoons salt or to taste
Fresh ground pepper, lots
2 – cups good quality white wine
It is very important to use a heavy cast iron skillet when preparing this. Heat the olive oil until bubbling hot. Then add the shrimps and all of the dried seasonings. Coat heavily with the black pepper and let simmer for a couple of minutes. Then add the white wine and let simmer for another couple of minutes. Next, carefully add the garlic and cook until almost golden brown (it cooks reeeeal quickly, so watch it!). Remove skillet from heat PRONTO! You literally serve this in the cast iron skillet, so have a HEAVY potholder or towels on your table where you are going to eat. Serve this with warm crusty French bread (for dipping into the juice!). It is a little messy, so have lots of paper towels around or a nice hand towel. Be careful at first, it is hot! Take some shrimp out of the pan and put them onto your plate. Let them cool just a little. Then peel and eat! Remember to dip your bread into that juice in the pan, I garontee it is good! So good you know what is going to happen... That's right folks, it is time for a Creole style "MJM Mouthgasm"!!!
