This week is National Wild Rice Week! Now that fall is officially here, it is a great time to warm up your dinner table with a wild rice dish. Try this great vegetarian option below.
There are several varieties of wild rice grown in various locations all over the world. Most varieties grow in shallow water, including the wild rice of the US Atlantic and Gulf coasts, the Boreal Forest regions of Canada, and the San Marcos River in Texas.
Rice is a great addition to any meal. It can take the place of pasta, make a fantastic side dish, and thicken up a soup or stew.
2 onions, finely chopped
3 celery, thinly sliced
6 ounces uncooked wild rice
2 1/2 cups water
1 small can condensed cream of mushroom soup
1/2 cup butter
1/2 pound colby jack cheese, cubed
1/2 cup sliced mushrooms
Place all ingredients in slow cooker together. Cover, and cook on low for 8 hours.
