This is an easy recipe to liven up a traditional tomato sauce.
Ingredients:
- 2 tbs extra virgin olive oil
- 1 red onion, diced
- 2 cloves garlic, minced
- 10-12 button mushrooms, sliced
- 1 tablespoon fresh oregano
- 1/2 tablespoon fresh basil
- 3-4 large tomatoes, diced
- 1 tablespoon sugar
- 1 teaspoon red pepper flakes (more if you prefer)
- 1.5 pounds steamed shrimp
- salt and pepper to taste
Heat olive oil over medium high heat until thin and heated through. Stir in onion and garlic and cook until lightly browned, about five minutes. Stir in mushrooms, oregano, and basil; cook for an additional two minutes.
Add tomatoes, sugar, and red pepper flakes. Bring to a boil, stirring constantly. Reduce heat to medium and simmer for ten minutes.
Remove sauce pan from heat and stir in shrimp. Add salt and pepper to taste and allow sauce to stand for fifteen minutes before serving. Spoon over your favorite pasta.
