September is National Chicken Month! Chicken is a great protein source that is inexpensive, easy to work with, and goes well with any flavors from sweet to spicy to savory.
Chicken is great on the grill, fried and locally inspired, or as a pizza topping. Make your chicken Italian with tomato sauce and garlic, French with mushrooms and wine sauce, Spanish with a spicy chocolate mole sauce, or Moroccan with cayenne, cinnamon, cumin, and cloves. Grill chicken with lemon, capers, and asparagus.
Chicken is also a great way to cut calories without sacrificing taste. Ounce for ounce, chicken has fewer calories and less fat than ground beef or pork chops. It makes a great topping for salads as well. For a great way to say goodbye to the summer, try this light salad topped with grilled chicken breast.
Rachel Salad with Chicken
- 1 cup baby spinach
- 1 oz gorgonzola cheese, crumbled
- 1 tablespoon pecan pieces
- 2 tablespoons sweetened dried cranberries
- 2 tablespoons light Italian dressing
- 2 oz chicken, grilled and sliced
Top spinach with all ingredients and enjoy! This is a fast, easy salad and the chicken can also be boiled, pan fried, or baked as you prefer.
