Thanksgiving is right around the corner and it's time to start planning your meal for the big day!  One of my favorite dishes at Thanksgiving is stuffing.  This recipe has been in my repertoire for years.  Try it and you won't be disappointed. 

Corn Bread Bacon Stuffing

• 4 slices bacon, chopped
• 1 c. celery, chopped
• 1 c. onion, diced
• 2 eggs, beaten
• 1/4 tsp. pepper
• 1 tsp. poultry seasoning
• 2 packages Jiffy corn muffin mix, prepared and coarsely crumbled
• 1 c. dry bread cubes
• 1/2 to 3/4 cups chicken broth

In a medium skillet cook chopped bacon, celery, and onion till bacon is crisp and veggies are tender.  DO NOT DRAIN.  Meanwhile, in a large bowl combine eggs, pepper, and poultry seasoning.  Add corn bread and bread cubes:  toss lightly till mixed.  Add the bacon mixture.  Drizzle with enough of the broth to moisten, tossing lightly till mixed.  Place in a large casserole pan and bake at 375 degrees for 25 to 30 minutes.  Makes 8-10 servings.
