Summer is quickly coming to an end. Take advantage of the fruit that's still available at the market and whip up a summer dessert. Strawberries are still available in Raleigh grocery stores and you can even find them on sale in some venues. You don't have to have the best of the best strawberries for this dessert. Most of the strawberries are pureed so it doesn't matter if they're "pretty looking".
Strawberry Angel Food Cake Trifle
Mix and bake the cake mix according to package instructions and cool. Cube into bite-size pieces and place into a large bowl. Wash and hull strawberries. Place half of the strawberries into a food processor and puree. Place the Cool Whip into a large bowl and fold the pureed strawberries into it. Slice the rest of the strawberries into a small bowl. At this point you may refrigerate everything until you're ready to assemble the dish and are ready to serve.
To assemble: Layer cubed cake into a large trifle dish or individual trifle dishes. Layer with strawberry Cool Whip mixture. Layer with sliced strawberries. Repeat layers. Top with a dollop of Cool Whip. Serve.
