Pumpkin stands are popping up everywhere in the Raleigh area. There are also several local pumpkin farms that have a variety of entertainment for the kids and you can even pick out your own pumpkin.
Hill Ridge Farms is located in the town of Youngsville, just outside of Raleigh. Vollmer Farm located in Bunn is another favorite place to get pumpkins with the kiddos. Pumpkin Pecan Caramel Pie
- 1/4 c. caramel ice cream topping, plus more for drizzling
- 1 graham cracker crust
- 3/4 c. pecan pieces
- 1 c. milk
- 2 pkg. instant vanilla pudding
- 1 c. pureed pumpkin
- 2 tsp. pumpkin pie spice *
- 1 8 oz. tub whipped topping
Pour caramel topping into crust; sprinkle with pecans. Beat the milk, pudding, pumpkin and spices until blended. Stir in 1/2 cup whipped topping; spread over pecans. Refrigerate for 1-2 hours. Top with remaining whipped topping; drizzle with caramel topping and sprinkle with more pecans.
* If you don't have pumpkin pie spice substitute 1 tsp. cinnamon, 1/2 tsp. ginger, 1/8 tsp. nutmeg and 1/4 tsp. allspice.

I love pumpkin pie with a graham cracker or gingersnap crust. The caramel is a great addition!
