This is a quick dinner that can be prepped in the morning before you go to work. The chicken can start marinating in the morning and you can mix the corn pudding batter up ahead of time as well and refrigerate it. When you get home from a long tiring day, all you need to do is pop it all in the oven. Serve with some broccoli or brussel sprouts steamed in the microwave.
Oven Fried Chicken
4 boneless chicken breasts trimmed of fat
1 c. buttermilk
1 tsp. Frank's hot sauce
2 c. Rice Krispies cereal
1 tsp. paprika
1/2 tsp. onion powder
1/2 tsp. salt
Mix buttermilk and hot sauce in medium size bowl. Marinate chicken in buttermilk mixture for at least 2 hours covered in the refrigerator. In a food processor mix cereal, paprika, onion powder and salt. Pulse until mixture is broken down into a crumb mixture. Pour crumbs into shallow dish. Dredge chicken in crumb mixture and place into a 9x13 greased pan. Bake at 400 degrees for 30 minutes or until internal temperature reaches 165 degrees.
Kendra's Corn Pudding
2 eggs, beaten
1/4 c. margarine or butter melted
1 can creamed corn
1 can corn
1 box Jiffy corn muffin mix
8 oz. French onion dip
Stir all ingredients together in a large bowl. Bake in a greased 2.5 quart casserole dish at 400 degrees for 30 minutes.
