
Finished shrimp tacos
The 1st time I ever had a shrimp taco was in culinary school. We were studying regional cooking in the United States and when studying Mexican cuisine we tried out shrimp tacos. This is my take on this recipe and now I absolutely can’t get enough of these delicious and healthy shrimp tacos.
INGREDIENTS:
½ cup cooked shrimp, cut into small pieces
1 Tablespoon butter
Seasonings: packet of taco seasoning, Old Bay, garlic and pepper, paprika
¼ cup water
White corn taco shells
Shredded lettuce
Diced tomatoes
Shredded Mexican blended cheese
Hot sauce or guava cocktail sauce
PROCEDURE:
1. In a small sauté pan heat the butter on medium high heat until it has melted. Add the shrimp.
2. Season the shrimp with the taco seasoning, Old Bay, garlic and pepper and paprika. Mix to combine.
3. Add the ¼ cup water, cover with a lid, and continue to steam the shrimp until all the water has evaporated, about 5 minutes. Remove from heat.
4. Heat the desired amount of taco shells in the microwave for about 30 seconds.
5. To serve: Spoon a small amount of the shrimp into the shell. Top with shredded lettuce, diced tomatoes, cheese and the hot sauce or cocktail sauce. Eat and enjoy!

VARIATIONS:
*This recipe was made with leftover shrimp from the margarita shrimp recipe, but feel free to use fresh shrimp or most grocery stores make it convenient to buy already frozen cooked shrimp that you can just heat up. You can also serve the shrimp whole, and not cut it into small pieces or you can use small popcorn shrimp.
*Try also using store-bought breaded shrimp like coconut shrimp or small popcorn shrimp for a nice crunch. Coconut shrimp will add a nice tropical feel. Just make sure you follow the package instructions on how to heat.
*You can also sauté the shrimp with various vegetables such as corn, black beans, red peppers, cilantro, etc…Then you have your vegetables mixed in with the shrimp to add another flavor to your tacos.
*For a lower fat version you can always use flour tortillas or whole-wheat tortillas. You can also stuff these into a pita too. Try topping some tortilla chips with the shrimp mixture and cheese. Bake in the oven and you have shrimp nachos. Garnish with the above items and you can even add sour cream, black olives, and guacamole.
*You can also buy already made tostada shells or a taco salad bowl for an easy shrimp taco salad or an easy shrimp tostada.
