Having a delicious, homemade breakfast waiting for you when you wake up on Christmas morning is one of the best gifts you can open. This yummy casserole cooks all night in your crock-pot or slow cooker.
Recipe:
1/2 lb sausage, cooked and crumbled
6 slices turkey bacon, cooked and sliced (less greasy than pork bacon)
1/4 cup sliced green onions
2 cups frozen hashbrowns
2 cups shredded cheddar
8 eggs
1 cup milk
1 teaspoon pepper
1 teaspoon ground dry mustard
Method:
Use a small dish that fits inside your crock-pot. I used a 1.6 liter round dish, you want something small and deep.
Start by layering half of the sausage in the bottom of the greased casserole dish. Next layer half the bacon, and half the green onions.
Add half the frozen hashbrowns and then half the cheese.
Mix together 4 of the eggs, 1/2 cup of the milk, 1/2 teaspoon pepper and 1/2 teaspoon of dry mustard. Pour over the cheese layer.
On top of the egg mixture, layer the rest of the sausage, then bacon, and then the green onions.
Add the rest of the frozen hashbrowns. Mix together the rest of the eggs, milk and remaining seasonings. Top with the last cup of cheddar.
Place in your crock-pot and cover it. Cook on low overnight, for 8-9 hours.
Slice, serve and enjoy the next morning!
