Blueberry turnovers recipe


  Three ingredients! Can't go wrong with this one... 

I've been intimidated by puff pastry for a while now. Finally I ventured into trying it a few weekends ago. It was awesome! Delicious and flaky, absolutely no work and it turned out perfect.

Puff pastry is available in your freezer aisle. I had to ask a stocker boy to help me find it, I looked everywhere and couldn't find it. Seemed to me it should be with the frozen bread and pie crusts, but at my grocery, it was with the frozen pies. So don't be afraid to ask, they are there to help, remember.

Blueberry turnovers
1 cup fresh blueberries
1/2 cup sugar
1 puff pastry sheet
1 egg, for wash
top with easy glaze

Pepperidge Farm Puff Pastry has two sheets of pastry, that is folded into threes. Take one of the sheets out of the package, and let it thaw for a few hours (I took mine out in the morning, and made it that evening) in the fridge.

Spread out the sheet, and smooth over the creases with your fingers. Cut into four equal squares, I used my big pizza cutter.

Add 1/2 the blueberries and sugar into a small saucepan. Cook over medium heat until the blueberries turn into a syrup, about ten minutes or so. Take the remaining blueberries and split them across the four squares (see slide show). Concentrate them on one corner.

Pour the blueberry syrup mixture over each blueberry pile. Try not to spill the syrup on the edge of the pastry, or it will be hard to stick together.

Take the far edge of the square, across from the berries, and press it over the berries to form a triangle. (this is hard to describe! make sure to check out the slideshow!) Use a fork to press down the edges to fuse them together. Brush the whipped egg over the pastry, this will make it nice and shiny.

Bake at 400 degrees for about 20 minutes. Let cool slightly on a rack, then top with the easy glaze.

    Hey Liz, on your slide show, after you pressed the edges of your pastry together, you brushed something across the top. Was that melted butter? Or an egg?

    Lalee, I'm so sorry! I knew that would happen sometime soon, I skipped a step. Yes, I have altered it above, but it may take a bit to show. Brush a whipped egg across the top, it will help make it nice and shiny.
